Lenim (fried pastry) with cheese

Ingredients:
250 grams of flour
1 teaspoon of salt
1 teaspoon of sugar
1 tablespoon of vegetable oil
Warm water for kneading
200 grams of grated cheese (use any type you prefer)
Oil for frying
Steps:
Prepare the dough:
In a large bowl, mix the flour, salt, and sugar.
Add the vegetable oil.
Gradually add warm water while kneading until you get a smooth, cohesive dough.
Let the dough rest for 30 minutes, covered with a clean cloth.
Shape the dough:
After the dough has rested, divide it into small balls.
Take one ball and roll it out on a floured surface until it’s thin.
Add the filling:
Place a tablespoon of grated cheese in the center of the rolled-out dough.
Fold the dough over the filling, shaping it into a rectangle or triangle.
Seal the dough:
Ensure the dough is sealed well so the cheese doesn’t leak out during frying.
You can use a little water on the edges to help seal it tightly.
Frying:
Heat enough oil in a deep pan.
Fry the filled dough until golden brown on all sides.
Serving:
After frying, place the Lenim on kitchen paper to absorb excess oil.
Serve hot with a dipping sauce of your choice.
Tip:
You can add herbs or spices to the cheese filling for extra flavor.
