smoked salmon crepes

Ingredients:
1- For the crepes:
- 1 cup flour
- 1 cup milk
- 2 eggs
- 2 tablespoons melted butter
- A pinch of salt
2- For the filling:
- 200 grams smoked salmon
- 100 grams cream cheese (like Philadelphia)
- 2 tablespoons lemon juice
- A small handful of fresh dill (optional)
- Finely chopped green onions
- Black pepper to taste
Instructions:
For the crepes:
1. In a large bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth.
2. Heat a non-stick pan over medium heat and lightly grease it with a bit of butter.
3. Pour a small amount of the batter into the pan, swirling it to cover the surface evenly.
4. Cook each crepe for 1-2 minutes on each side until golden. Repeat until all the batter is used.
For the filling:
1. Mix the cream cheese with lemon juice, dill, green onions, and a pinch of black pepper.
2. Spread a thin layer of the cream cheese mixture over each crepe.
3. Add slices of smoked salmon on top of the cheese.
To serve:
- Roll up the crepes tightly, then slice them into smaller pieces or serve whole.
- Garnish with extra dill or lemon slices if desired.
