Fish and Vermicelli Soup (Soba)

  • Ingredients:

  • 500g of fish fillets (any type of your choice: tuna, salmon, white fish)

  • 100g of vermicelli

  • 2 medium onions, finely chopped

  • 3 tomatoes, finely chopped

  • 3 garlic cloves, minced

  • 2 tbsp olive oil

  • 1 tsp turmeric

  • 1 tsp paprika

  • 1 tsp cumin

  • Salt and black pepper to taste

  • Bay leaf (optional)

  • Water (as needed)

  • Steps:

    1- Prepare the Fish:

    • Cut the fish into small, equal-sized pieces.

    • In a large skillet, heat 1 tbsp of olive oil over medium heat.

    • Add the fish pieces and cook for 5 minutes on each side until slightly golden. Remove the fish and set it aside.

    2- Prepare the Vegetables:

    • In the same skillet, add the remaining tablespoon of olive oil.

    • Sauté the onions and garlic until golden.

    • Add the chopped tomatoes, turmeric, paprika, cumin, bay leaf, salt, and black pepper.

    • Let the mixture cook on low heat for about 10 minutes until well combined.

    3- Add Water and Vermicelli:

    • Add about 1 liter of water to the mixture and bring it to a boil.

    • Once the water boils, add the vermicelli and cook for 5-7 minutes until tender.

    4- Add the Fish:

    • After the vermicelli is cooked, add the fish pieces back into the soup.

    • Lower the heat and let the soup simmer for another 5 minutes to allow the flavors to meld.

    5- Serving:

    • Serve the fish and vermicelli soup hot, and you can add a splash of lemon juice on top for a refreshing touch.

  • Tips for Preparing Fish and Vermicelli Soup:

    1- Fish Type: You can use any type of fish you prefer, but it's best to choose one that holds its shape after cooking, like salmon or tuna.

    2- Vermicelli Soaking: If using thicker vermicelli, soak it in hot water for 5 minutes before adding it to the soup to speed up the cooking process.

    3- Adjusting Consistency: You can adjust the amount of water depending on how thick or thin you want the soup. Use less water for a thicker consistency.

    4- Spices: The combination of turmeric and cumin gives the soup a distinctive flavor, but feel free to adjust the spices according to your taste.
