Fish and Vermicelli Soup (Soba)

Ingredients:
500g of fish fillets (any type of your choice: tuna, salmon, white fish)
100g of vermicelli
2 medium onions, finely chopped
3 tomatoes, finely chopped
3 garlic cloves, minced
2 tbsp olive oil
1 tsp turmeric
1 tsp paprika
1 tsp cumin
Salt and black pepper to taste
Bay leaf (optional)
Water (as needed)
Steps:
1- Prepare the Fish:
Cut the fish into small, equal-sized pieces.
In a large skillet, heat 1 tbsp of olive oil over medium heat.
Add the fish pieces and cook for 5 minutes on each side until slightly golden. Remove the fish and set it aside.
2- Prepare the Vegetables:
In the same skillet, add the remaining tablespoon of olive oil.
Sauté the onions and garlic until golden.
Add the chopped tomatoes, turmeric, paprika, cumin, bay leaf, salt, and black pepper.
Let the mixture cook on low heat for about 10 minutes until well combined.
3- Add Water and Vermicelli:
Add about 1 liter of water to the mixture and bring it to a boil.
Once the water boils, add the vermicelli and cook for 5-7 minutes until tender.
4- Add the Fish:
After the vermicelli is cooked, add the fish pieces back into the soup.
Lower the heat and let the soup simmer for another 5 minutes to allow the flavors to meld.
5- Serving:
Serve the fish and vermicelli soup hot, and you can add a splash of lemon juice on top for a refreshing touch.
Tips for Preparing Fish and Vermicelli Soup:
1- Fish Type: You can use any type of fish you prefer, but it's best to choose one that holds its shape after cooking, like salmon or tuna.
2- Vermicelli Soaking: If using thicker vermicelli, soak it in hot water for 5 minutes before adding it to the soup to speed up the cooking process.
3- Adjusting Consistency: You can adjust the amount of water depending on how thick or thin you want the soup. Use less water for a thicker consistency.
4- Spices: The combination of turmeric and cumin gives the soup a distinctive flavor, but feel free to adjust the spices according to your taste.
