Roasted Tomato Soup

Ingredients:
Tomatoes
Onion, chopped
Garlic cloves
Fresh basil
Salt and pepper
Vegetable or chicken broth
Instructions:
Roast the Vegetables: Preheat the oven to 200°C (400°F). Place tomatoes, onion, and garlic on a baking tray, drizzle with olive oil, and roast for about 30-40 minutes until caramelized.
Blend the Ingredients: Transfer the roasted vegetables to a blender, add fresh basil, and blend until smooth.
Simmer the Soup: Pour the mixture into a pot, add broth, and season with salt and pepper. Simmer for 10-15 minutes.
Serve: Enjoy hot with a drizzle of cream or croutons for extra texture.
